For Craig and Mery, opening Bácús in the quaint village of Kildalkey was the culmination of years of passion for food, travel, and community. They have both always shared a love for culinary exploration - Mery, with her formal training in Argentina, and Craig, whose experiences in various restaurants sparked a deep interest in food. Their travels often revolved around discovering new places to eat, and it became a key part of their life together.
The decision to start a business came after settling down in Kildalkey, raising two young children, and a shared desire to create something of their own. "We just kind of decided, hey, it’s now or never," Craig says. They initially thought about converting a horse box into a food stall, but the logistics and cost made them rethink the idea. Instead, they stumbled upon a former barbershop that seemed like the perfect space for a café. They got in touch with the owner, secured a favourable deal, and within just a few months, they opened their doors.
"It was a sprint," Craig recalls. Mery had just given birth in September, and they opened in December. Despite the challenges, they poured their heart and souls into transforming the space, and after almost a year, they’re thrilled with how far they’ve come. The café is still evolving, but it has already become a beloved part of the community.
A Blend of Cultures and Passion for Quality
Bácús' identity reflects both Craig and Mery’s backgrounds, with a menu featuring classic café favourites with an Argentinian twist. "We try to cater to for everyone," Craig explains, "from sweet treats to savoury options like sandwiches and decadent brownies." Coffee is a major focus, with beans roasted fresh in Blanchardstown and delivered the next day. "We don’t try to play second fiddle to anyone," Craig adds. "We serve the best coffee we can."
Mery, the mastermind behind most of the baking, begins her days early to ensure everything is fresh. "We try to keep things as healthy as possible, but still flavoursome," she says. With options like protein balls, carrot cakes, and almond bake wells, they strive to offer something for everyone while focusing on quality ingredients and freshness.
Building a Community
One of the most rewarding aspects of running Bácús has been the warm support from the local community. "We have so many regular customers, and we’ve gotten to know so many people," says Craig. It's not just the Kildalkey locals who have embraced the café; people from neighbouring towns like Athboy, Rathcairn, and Trim also stop by regularly. They’re even catering for local events like birthdays and school lunches.
For both Craig and Mery, seeing familiar faces and hearing positive feedback from customers is one of the best parts of the job. "It’s amazing to see people come back day after day," he shares.
The couple also enjoy the close-knit nature of village life. "You get to know people on a first-name basis, including your neighbours," Craig says. Having previously lived in Dublin, they appreciate the slower pace and sense of community in Kildalkey. "It’s been really easy to settle in, and it’s great to feel like part of the village," Mery adds.
Balancing Family Life and Business
With two young boys and a café to run, finding balance can be challenging, but both Craig and Mery are deeply passionate about what they do. "You just don’t have a choice," Craig says. "You make it work because it’s what you love."
Mery, who previously worked remotely in HR, knows the difference between a job you’re passionate about and one that doesn’t fulfil you. "Even though we’re tired, we love what we do," she says. "When you’re building something yourself, there are no limits to how far you can go."
